OENOLOGICAL DATA

Vinification: Manual harvest followed by soft pressing, without prolonged skin contact ("saignée" method). The resulting must, after a brief period of static settling, ferments at a controlled temperature.

Aging: Aging on the fine lees for 4 months to impart greater structure and elegance, followed by further resting in bottle.
