Harvest period: Early September. The grapes are harvested by hand as soon as rigorous checks confirm perfect ripeness, in order to preserve all the typical aromas of the grape variety.
OENOLOGICAL DATA

Vinification: Manual harvest followed by soft pressing without destemming. The must, after a brief period of natural settling, ferments at a controlled temperature.

Aging: Aging on the fine lees for 5 months to enhance its structure and varietal aromas, followed by resting in bottle.
