TASTING NOTES

Color: Luminous straw yellow, crossed by a fine and persistent perlage.

Aroma: Intense and enveloping. The floral and fruity notes of the varieties blend with elegant yeasty hints, thanks to the long aging on the lees.

Taste: Full, soft and balanced (Extra Dry). The typical freshness of the bubbles is enriched by remarkable complexity and a long, pleasant finish.
AGRONOMIC DATA

Altitude: 50 meters above sea level.

Harvest period: From mid-August to early September. The grapes begin to ripen around mid-August and are intentionally taken beyond their physiological ripeness to impart greater structure to the product. The different varieties are hand-harvested separately.
OENOLOGICAL DATA

Vinification: The grapes are destemmed and placed in a soft press. After static settling, the must ferments at a controlled temperature.

Second Fermentation and Aging: Secondary fermentation using the long Charmat method for 4 months in contact with its lees, a technique that imparts great complexity to the wine. This is followed by bottling and a further 3 months of aging in bottle.
